Chronicles of a simple girl in a sparkling world

The Struggle is Real. So Real.

written on Monday. finalized today. wine distracted me. whoops.

Y’all. It’s Monday. But on top of that, it’s the first Monday back after 2 touch and go weeks of work. You know, the weeks of Christmas and New Years. I have an amazing boss who gives us either the week of Christmas or New Years off, plus the day of the holiday off, so I’ve really been enjoying the downtime. But not the downtime teachers have! hehe. Back to reality, MOM. 🙂 That being said, today has been a struggle. I could barely wake up/get out of bed. (and on tuesday, I slept through/turned off THREE alarms. get. it. together. jennifer.) And then I had ADD/ADHD allllllll day. I hit myself in the head with a weight at the gym (yes, my trainer laughed at me) and then I tripped over a chair at the gym! UGH. And it’s cold. Still positive and way warmer than the negative crap in Minnesota and Wisconsin coworkers are experiencing, but for this Texas girl, it’s getting extreme.

Ok. and it MIGHT have something to do with the fact that I am addicted to Scandal, but haven’t been able to watch this season because I am also addicted to football. DVR Scandal, watch Thursday Night Football – that’s my life in the fall. Luckily, not many of my friends are addicted to Scandal and pretty much NO ONE posts about it on Facebook, so no spoilers are given! Anyways, I had 4 episodes until the end of the season last night, and I COULD. NOT. STOP. watching. It ended up being a later night than I wanted.

Anyways, one of my new years resolutions (I’ll blog about all of them later) is to try AT LEAST one new recipe per week. I saw someone have this as their resolution last year and I thought it was a great idea. I have SO many cookbooks that all have recipes that sound delicious and I am a Pinterest addict. I’m also starting to get bored with food, so I really need to start making new things. side note: i’m on meal plans to attempt to be a healthier person and steamed veggies and george foreman chicken is getting old. fast. Let’s just hope I can keep this one up.

Tonight, I tried two new recipes – my Uncle Looch’s chicken and rice & roasted brussel sprouts. First one I have had before just haven’t ever made it and second one I haven’t had or made. but i’ve had roasted brussel sprouts before. I must say, very successful dinner! Since I am only one person I halved the chicken and rice.

Uncle Looch’s Chicken and Rice

2 c. rice (I used brown rice, can’t taste the difference)

2 c. water

1 tbls. butter

1 package of onion soup mix

3-4 chicken breasts (frozen or not frozen)

salt and pepper

Mix everything but the chicken and s&p together. cover and bake for 30 minutes at 400 degrees (or until chicken is completely cooked).

Chicken and Rice before it was cooked. You can see how the rice soaked up nearly all of the liquid.

This recipe is super easy and delicious! Like I said I halved the recipe, but used the full onion soup mix because I love the flavor of it. If I ever make the full recipe, I will likely use 2 packages of it. I also realized as I was typing this out I forgot the butter. Told y’all I’ve been a disaster lately. sigh.

Since no one I never actually remember to take the meat out of the freezer the night before, I put the chicken breasts in frozen. My uncle has always made it the morning of and let it sit in the fridge all day. The rice soaks up the soup mix throughout the day and makes it yummy! I would really suggest not putting them in frozen. I’d also suggest pounding them so they are thinner. I ended up having to cook mine for 40 minutes. Good thing is, the rice didn’t dry out at all. I used 2 chicken breasts so I could get 4 meals out of it. When you put the chicken on the rice, don’t forget to add the s&p. I totes forgot to do that, too. BBBUUUUTTTTT it was still delicious because of the yummy soup mix.

Roasted Balsamic Brussel Sprouts (recipe adapted from here.)

1 lb. of brussel sprouts

3 tbls. olive oil

3+ tbls. balsamic vinegar

Wash brussel sprouts. Cut in half hotdog style. (YES. Brussel sprouts have hotdog and hamburger style, too.) Toss in olive oil. Toss in balsamic vinegar. Line in one layer on cookie sheet. Cook on 400 degrees for 20-30 minutes.

This too was super easy. I was slightly nervous since it was my first time to really roast a vegetable. When I was done, I had cooked them for 27 minutes, and preferred the sprouts that had been cooked with the flat part on the cookie sheet. It seems they caramelized a bit more than the others. The time is totally dependent upon how cooked/caramelized you want them. Also, I took them out at 20 minutes to check them and sprinkled a little more balsamic vinegar on them. When I got them ready to bake, I didn’t feel like the balsamic was “sticking” to them. I don’t know if next time I need to dry them better, or maybe I just need to make all of them be flat side down. They turned out amazing so I’m just going to not change any ingredients. haha. I am not a big fan of pepper, and while you couldn’t taste it, i probably wouldn’t waste it on there next time. When I went to the grocery store, I learned that there isn’t a balsamic vinegar, and then versions from that. There are just versions of balsamic. Soooooo, I guessed on which on to get. I showed the picture for you people like me who don’t know these things.

Brussel sprouts after being tossed in oil and vinegar but before baking. You can see here why I didn’t feel like the balsamic vinegar “stuck” well.

The balsamic I used.

After 27 minutes of baking, they’re DONE! And yes, I ate one to see if I thought it was done enough. 🙂 Is there any other kind of test than taste test?!

Wine. because it’s absolutely delicious. Lost Oak Viognier. Buy it. You won’t regret it.

Here is a picture of the brussel sprouts comparing the flat side down and flat side up. I swear the dark ones aren’t burnt. Not even really crispy. Just perfect. 🙂 I’m putting them all face down next time.

Both recipes were a hit, even though I am the only one who ate them. Actually, I’d probably be more credible if I had someone to try them with me, but I’m a single lady preparing to be a housewife and it’s better for me to like it than not like it. Both recipes reheated well also. I did them for 2 minutes, cut the chicken and then did one more minute.

Hope everyone has a great week!

1 year ago today, I made my first “big girl” purchase – my car! A pearl, 2013 Ford Edge to be named Marilyn. (shout out to Kathryn for helping me name her!)

I had no idea that in one short year, your life would so closely resemble the tragic life of Marilyn Monroe. 3 months in, we took out a 55-gallon, plastic barrel on 290 breaking every piece of your front end, shortly followed by running over more things on 290, including a piece of plywood and something that got stuck underneath that only let go because I hit ANOTHER hole on 290. Lets not forget the hail damage from a trip in April to Salado where there are no coverings or overpasses even because 35 is under construction. Or scraping your wheel on the curbs. Oh, and the cracked windshield this summer.

And how in the world could I forget the TWO speeding tickets I got?! Thanks to the two defensive driving courses I’ve taken, I’m sure to be the most knowledgeable driver in Texas. (Notice, I did not say safest. What can I say, I inherited my Mother’s heavy right foot!)

None of these things overshadow the fun we’ve had on all of our many road trips together, though! From friends picking me up after crazy nights out, to gambling in Louisiana, football season in College Station, San Antonio, the numerous trips to Houston where I feel like I’m torturing you with how terrible the roads are, there’s no telling all the stories you would tell if you could talk!

HAPPY 1ST BIRTHDAY, MARILYN! Can’t wait for our next adventure!

Oh hey, the end of December…

It has officially been 2 months and 1 day since I posted. FAIL, I know. No worries. I’m still out here. Just living out blog posts and not having time to post about them! It has been so crazy since October 28 (my last blog post)! Since then, I’ve been to Anne’s bachelorette party, hosted Brittney’s bachelorette bash, been in Anne’s wedding, watched my sister get married and all the things that come along with that, tailgated for the last time on Thanksgiving this year, celebrated my Momma’s birthday, been to a couples shower and a baby shower, got lots more save the dates and shower invites (because evidently this whole wedding event every weekend doesn’t end when you’re 24), procrastinated my Christmas shopping, ran another half marathon, had Christmas with the fam bam, made plans for New Years Eve that is in 2 days (that came quickly, ugh), and started giving my house some more attention, you know, because I have a housewarming party in FIVE days.

Anyways, in other news, if you haven’t heard of theSkimm you need to get on it. Especially if you’re a girl who loves some sass in your news. Just go sign up and it will be the best 5 minutes of your morning. Every weekday, because they love brunch too. No, seriously. That’s what they say.

Here’s a taste of what blogs you have to look forward to. I’m hoping to get around to them in the next month or so…

  • Anne’s wedding
  • Brittney’s Bachelorette Bash
  • Brittney and Blake’s Wedding
  • #teammilesfortheaisle – round 3
  • Christmas
  • Aggie Football
  • New Year’s Eve (because let’s be real, by the time I get to it, it will have passed)
  • Housewarming Party (see above…)
  • House update

Say you’re prayers that I can get to all of this in a reasonable time frame..

It is officially winter in Texas. It was freezing this morning. Time to hibernate. Kidding. Wish I could though. Back to coffee I go.

MAID OF HOTNESS: Throwing out everything, including the kitchen sink…

and by “throwing everything out” I don’t mean we’re starting over (Praise Jesus). It means I’m catching you up on EVERYTHING we’ve been up to!

So last time I posted, invitations were being addressed. Now, they’re out. THE INVITATIONS ARE OUT! SO CRAZY. The RSVPs have started coming in and we’re all starting to get super excited. And nervous. And stressed. We are LESS than ONE MONTH until they said “I DO!”. Holy smokes! This year (minus 12 days to be exact) have absolutely flown by! Don’t forget about the RSVP deadline that’s coming quickly! And don’t think “they know you’re coming” because they don’t. Unless you RSVP. And if you don’t RSVP and show up, you eat last, and better pray there is some left! 🙂 Kinda kidding, kinda not. Just please RSVP people. It’s online so we made it about as easy as possible!

Since the last post, we’ve had the bridal shower and the couples shower. Both were so cute! Her bridal shower was kitchen themed and she got lots of goodies. I’m so glad because I can now officially get her hand-me-downs! 🙂 The couples shower was “guns & roses” themed. There was a skeet shoot, of course. I’ve posted a few pictures below for everyone to see!

Cupcakes made by Kasie Christman!

Just some of the decorations! By Courtney Bielski I believe!

Because no couple’s shower in Texas is complete without guns. 🙂

Bride and groom to be!

Wedges + guns = Don’t mess with texas women 🙂

Lately, I’ve just been planning the bachelorette party. Making sure EVERYTHING is thought about and starting to be executed. I’m lucky to have a bestie that is taking the day off to come help me decorate the day before. I will have an entire blog post on the bachelorette party after it happens. I can’t promise it will be soon after it happens, so don’t hold your breath on it. It’s only 2 weeks before the wedding and the week in between the two, I’m in another wedding!

In other wedding news, I ordered some GORGEOUS Badgley Mischka’s for the ceremony. They’re supposed to be sparkly gold. FAIL. JUST FAIL. They are silver. I now have to return them. So sad. But, good news. I found some seriously amazing Bandolino’s at Macy’s this weekend!

Brittney and Penny came to Austin this weekend. We both finally had a free weekend! We needed to do the programs and the place that the invitations came from is here in Austin so it just worked out that we could accomplish some other things while she was here.  So, we got programs, my shoes, Penny’s first trip to Kendra Scott (see adorable pictures below), Yappy Hour hosted by BarkBox and Tito’s vodka, lining out details for the week of, delicious breakfast cooked. We also picked out our reception shoes. Because when you don’t spend as much on ceremony shoes you get new reception shoes too! 🙂

Happy Birthday, Stinky Devil!

Today, we had another doggie birthday in the Bremer house! Pugsleigh turned 2! I’m slightly concerned for what her terrible two’s will be like since she got her nickname “Devil” when she was a puppy and not much has changed! She got a devil toy and i baked her my doggie birthday cake. I will admit. I wasn’t near as prepared as last time and forgot to tell Mom to get the milk bones and beggin’ strips. Whoops. They still seemed pleased!

Happy birthday, you stinky stinky devil!

Scatterbrain central.

So, of course, last night after I posted, I remembered things that I should have put in my post.

First, and foremost, we picked up our bridesmaids dresses for my sister’s wedding! EEEK. They are so gorgeous and I can’t wait for everyone to see them!

Second, my house smells delicious. My sister got me this amazing candle from Bath and Body Works. If you haven’t been there to check out their fall scents. DO. IT. NOW. You won’t regret it. Thanks, Brittney!

Tonight, I went to Petsmart, Walgreens for things I forgot at the grocery store, cooked dinner and cleaned. This weekend is Pugsleigh’s 2nd birthday, so obviously she needed a toy. And Levi’s adoptiversary just passed. And you know, I can’t leave the others out! 🙂 I’ll be making birthday cake again this weekend!

For dinner tonight, I made spaghetti with spaghetti squash and ground turkey. It was really good and super easy! You should try it. I would have had salad, but I make homemade ranch (thanks, Uncle Looch!) and I forgot milk at the grocery store and Walgreen’s today. I’m not going back to the grocery store until Sunday so my lettuce will probably be bad by then. Joy. I hate wasting money. Oh and I just realized I need mayo too. #foodfail

I cleaned bathrooms. I broke a sweat. That has to be the worst chore ever. Especially toilets. Except that Clorox has made handy wand things with the cleaning stuff in them that you can throw away. Can Clorox please make those for the shower? I’d greatly appreciate it. Oh, and my bathroom has granite. And a stand alone shower. I used about 245 different cleaning products for my bathroom alone. Bathroom cleaning will be my go to punishment if I ever have heathens kids. On top of that, made pigs in the blankets for breakfast tomorrow, cleaned my kitchen, and washed the sheets on the guest bed. Which means, I need visitors!

Oh, and girls, need a reason/reminder to take off your makeup at night so you don’t get wrinkles? Get white sheets. When you wake up with an outline of your face on your pillow, you remember veryyyyy quickly.

As most of you have probably noticed, I’m blonde. Platinum blonde pretty much. I love it. Butttt, this means your hair is super dry. So, I’ve been trying to wash my hair less. Well, I think I’ve taken it too far. When 2 times in the same week, that just happen to be the days I washed my hair, people ask if I’ve gotten my hair done because it looks good, probably means I should wash it more frequently. Woops. 🙂 Do these people know how much work my hair is!? It doesn’t magically become dry and straight!

Most exciting, my rug gets delivered tomorrow!! Well, supposed to! I just got the shipping notification so if it arrives in one day, I am going to be SOOOOO excited! Slowly, but surely, one piece at a time, it is all falling into place.

It’s 10 pm and Chelsea Lately should be on. I miss that dang show. It was hilarious.

Anyways, I need to go to bed. Gym tomorrow morning. #girlswholift is the most ridiculous hashtag ever.

Oh and go read my post from last night because not enough of you did! 🙂

xoxo jenn

Time flies when you’re having fun..or maybe time just flies.

It’s already been a month since I wrote my last post. Never mind the fact that I just posted it a couple of weeks ago. I literally cannot believe it. I’ve known for quite some time that my fall was just going to be ridiculously packed. Since my birthday, I have plans for every weekend through December. I KNOW! Ridiculous, right?! It’s all good, fun things, but time is seriously flying by! We are only 61 days from my sister’s wedding!!

This post is going to be a big rant about life and everything that has happened in the past month.

Aggie football started back up. My heart is happy. I feel like life is complete again. We BTHO South Carolina. It was AMAZING. We’re currently 4-0 but the other teams we have beat are Lamar, Rice, and SMU. We’ve tailgated twice. WHOOP. The Lamar game was ridiculously hot. We had a 2 hour delay because of lightening. The Rice game was freezing and I was prepared for hot. It’s how it goes. Oh, the Rice game it also rained the week and day before. Drizzle the day of. We play Arkansas this weekend in Dallas. The next home game is Ole Miss. I’m so excited. Not only because it’s another home game, but Aliesha is coming in for it! Can’t wait to see her face! Should be a great tailgate.

The new Kyle Field is just perfect. I can’t wait to see it complete next season.

I got so sick this past week. The mold allergies just kicked my butt. I don’t have cedar fever, but now feel for those who do. It is truly miserable.

One plus I’ve found to living in the South part of town, is that I’m with all the hippies. I’m not a hippie or even close to it. And said hippies are all organic/natural people. They don’t wax anything. 🙂 Which means, I don’t have to plan ahead to get my eyebrows waxes because they ALWAYSSSS have appointments! Woohoo! I’m quite the procrastinator.

I’ve been in over a month! I didn’t even celebrate one month because it came and went so fast that I didn’t realize it until the day after! I even missed my Aggie rings birthday!

I’ve been shopping. 🙂

I got a couch. I got more throw pillows. I got a lawnmower. I got hedge clippers. I got curtains for my bedroom. I ordered a rug. I got curtain rods. My dad gave me an old drill. I got a coffee table from my aunt and uncles house.

Other than that, I feel like I’ve made little progress. Oh, and I’ve learned I’m not a handy person to have around. I’m probably more of a hazard. (Sorry, Mom, that you’re reading this. Please don’t worry too much. I won’t use a saw of any kind. Or really anything more than a drill and my lawnmower.)

And I realized I haven’t posted a picture of my bedroom (or any room) yet. I’m obsessed with my bedroom; I really am. I can’t wait to show it off except it’s an absolute disaster. I have a friend who is refinishing a dresser for me, but the dang drawer pulls didn’t come in so that I could get it this past weekend. Check out her stuff here. I’m hoping for this coming weekend. It will really help me become less stressed about my bedroom. I bought wicker drawers for a shelf thing I already had from target hoping that would tie me over until I got my actual dresser. But, go figure, I bought the wrong size. So all of that is just sitting in my closet. I have bags of clothes, and shoes, and scarves everywhere. I need to buy more clothes hangers. Except I want the wood ones. Thank you Ikea for being so cheap.

I am really struggling with the whole organization thing. I need to buy big furniture pieces. Except they aren’t near as fun as buying decorations. Except that I hate not having the big pieces because there is just random stuff everywhere and I shop and then I can’t find anything I like that’s even remotely reasonable. It’s a real battle in my brain. I hate having champagne taste on a beer budget. I really want this awesome lazy susan thing for my shoes. It costs $300. I just can’t do it. I wish I was better with power tools. I’m learning. I used a drill for the first time (and was successful) yesterday. I can’t use the function of it where you drill the screw directly into the wall yet. Baby steps. And I can’t get a hole through one of my walls around my window. I thought it was a stud, but can’t get it through for the life of me. Anyone wanna make the shoe thing for me? I’ll buy the materials and pay some labor. You know my birthday did just pass. And Christmas is coming up. 🙂 Oh and there’s this GORGEOUS mirror at Star Furniture if anyone is feeling REALLY generous.

I still have yet to even get close to finishing a room. It’s pretty annoying to be honest. I am getting my kitchen table and then starting to finish off rooms.

So, I will admit, my lawnmower story is pretty freaking funny. I grew up on acreage. We didn’t push mow. We had a riding lawnmower or you hopped on the tractor with the shredder. So, at 24, I learned to push mow. Kinda. I got a self propeller one. I might as well have been a 10 year old learning. Luckily, my dad was in town (and also picked out my mower) so I was under adult supervision. I made the mistake of starting in my front yard. The one with no boundaries between me and my neighbors. People NEVER mention that they don’t have wheels that turn. I almost went into my neighbors yard without control of this thing. And it doesn’t reverse. My dad LITERALLY shook his head and laughed. I had to kill the engine multiple times to regroup. I’m fairly certain he was quite embarrassed that his daughter couldn’t push mow. Anyways, I finished. I wouldn’t say I ever got the hang of it or that I did a great job. I certainly didn’t weed eat. I refuse. Regardless of how much I need to weed eat, I can’t. I feel like learning to push mow is enough for now. I’ll let y’all know if I’m any better after I do it again this week.

I also finally got my post office box key. We were about to start going around and around if they didn’t hurry up.

One of the things my sister wasn’t ever super concerned with was invitations. She found some things she liked, but ultimately I ended up designing them. She gave final sign off on all the proofs. We ordered from the Paper Place in Austin. They were great. And quick. So, Friday, we started addressing envelopes and tonight there’s an invitation party stuffing at her house! Hope y’all are having a great time, bridesmaids and recruits!

I have finally started finalizing bachelorette party plans and buying decorations! I am so excited to get everything set in stone! That is going to make a GREAT post.

This weekend kicks off the “real” wedding festivities as the first bridal shower is this weekend! I can’t wait to see what all the wonderful hostesses have put together! I’ll make sure to post about those later!

So, I know a lot of you are from where I’m originally from but if not, fair time in Texas is a BIG deal. It’s our county fairs, they usually happen one week after the other. There’s a livestock show for 4-H and FFA kids, rodeos, carnivals and most of all CONCERTS. It’s just a happy time of year. We have a bigger homecoming for the fair than we do the football game! Oh, and we even get school days off for the fair because so many kids participate. Dad and I went and saw Randy Rogers Band this weekend at Brenham. 🙂

I’m sure more exciting things have happened and if so I’ll write another blog. I really am trying to stay caught up on this thing, but literally TIME FLIES WHEN YOU’RE HAVING FUN! I’ll try to post more pictures as rooms get finished off.

Ok, I need to go grocery shop now before Monday Night Football and Dallas. <<Someone should wife me up soon. That’s dream wife material. TOTES kidding. Yes, I say totes for totally and obvi for obviously. Get over it. It’s my blog and I can talk how I want even if it annoys you. 🙂
